    This cheesecake slice blends tangy lemon and rich vanilla together with cream cheese making it perfect for sharing.

    Ingredients

    • 120g butter, softened

    • 90g brown sugar

    • 220g plain flour

    • 1/4 tsp salt

    • 120g caster sugar

    • 250g cream cheese, softened

    • 1 egg

    • 30ml milk

    • 20ml fresh lemon juice

    • 1 tsp vanilla extract

    Directions

    • Preheat oven to 180ºC. Line a 20cm x 20cm tin with baking paper.

    • In a medium bowl, blend the butter, brown sugar, flour and salt together with a fork until it resembles course bread crumbs.

    • Put 1/3 of the mixture aside for topping. Press the remaining mixture into the base of your tin. Bake for 15 minutes. Remove from the oven and allow to cool.

    • In another bowl, combine caster sugar and cream cheese, mixing until smooth. Thoroughly beat in the egg, milk, lemon juice and vanilla. Spread the mixture over the base and sprinkle with the brown sugar mixture.

    • Bake for 25 minutes or until the top is golden. Cool, then chill for at least 1 hour. Use the sides of the baking paper to lift out of the tin. Cut into 12 squares.
